Dietetic Internship: WMU Garden

On day two of dietetic internship orientation at WMU, we went to Western's garden which is a new garden that covers 7500 over the WMU area.  The group of interns got to go visit it and make homemade salsa. It was great! Pretty flowers that are native to West Michigan  2011 Interns (I'm second from the left)  and the guy on the far right is the one who planted the whole garden  Roma tomatoes Tons of basil  Chopping up the garden picked veggies   Best salsa! Summer Farm Vacation

After ending my last week at work and the week before my internship started, my husband and I took a week's vacation before starting my internship. We were mostly up north at my parent's farm and also went to A Ke$ha concert! Fall Fashion: Handful Review and Giveaway

When I first saw the Handful bra on another blog, I was immediately interested. It is a sports bra that is designed to flatter and not flatten your chest. For my review, I was sent the white Handful bra. Fall Fashion: Mango Tree Bangles Review

Peach and Blueberry "Cheesecake"

The reason that this recipe is called "cheesecake" is because it really tastes like it. It is a very healthy way to help your cheesecake craving. Ingredients: 1/2 cup cottage cheese (I actually used full fat and it was so rich and creamy!) 1 sliced peach 1/4 cup frozen blueberries A drizzle of sugar free syrup In a bowl, layer all ingredients and serve. Use the knife to cut lettuce, tomatoes, etc.  Use the spatula to spread a condiment such as hummus or mustard on a sandwich.  The knives seem to be very well made and I love that they come with a forever guarantee. The trimmer is nice and sharp and slices through a tomato nicely.  The knife feels nice in your hand and is very easy to use.  I'm sure that these will last a long time and I look forward to using them in all of my cooking adventures! Last year around this time, I was sent a bunch of Tasty Bite products to try for review. They were delicious and over the next few months, I enjoyed having all of them for different meals.  Now, I was sent a bunch more kinds of these products for my review.  I love all of these products! BLT Vegetable Stew

I really struggled naming this recipe. It contains so many ingredients and different flavors that I couldn't put it together. The best way that I can put it is that this is honestly one of the best meals that I have ever made and I highly recommend trying it! The cherry tomatoes and the Italian dressing make its own broth and is perfect for summer. Ingredients For the "stew" : 1 large zucchini, coarsely chopped 1 small head of broccoli, cut into bite sized pieces 1/4 cup light Italian dressing 2 cups chopped tomatoes (I used halved cherry tomatoes) For the BLT topping: 6 slices of bacon 2 slices of bread 1/4 cup chopped green onions 2 tablespoons shredded goat cheddar cheese 1 tablespoon shredded Parmesan cheese 1/2 teaspoon black pepper Directions: 1. Saute zucchini and broccoli in Italian dressing and 1/2 cup water. 2. Once vegetables are nearly soft, add tomatoes and simmer for about 15 minutes until all vegetables are soft. 3. Meanwhile, cook

New Beginnings

New Beginnings

Today marks the last day of my job as a dietary manager at a nursing home. It is a bittersweet goodbye, but mostly sweet.  There has been many ups and downs with this job and ultimately, I am happy to be moving on. I will be starting my internship to begin a dietitian on August 29th (so excited!!).  It is full time and I will be working on my master's degree in nutrition also. The blog might change a little bit through the next 10 months as I don't know what my schedule will be like.  There will be a lot of homework, studying, and tests.  I hope to be able to still post everyday but obviously doing well in my internship is my number one priority.  Please bear with me through these changes in my life!

 Who loves tie-dye clothing? I know that I do! Love Tanjane is a company that sells all kinds of cute tie-dyed clothes.  It is by Sonia Erneux. They have dresses, pants, scarves, shirts, etc.  The clothes come in all different colors.  My favorite colors are probably the reds and pinks.  Skirt or tube top! Since it is still summer, it is the perfect time to wear these light and fun dresses. As fall is approaching, the tie-dyed scarf would be so cute with some skinny jeans and boots. I get excited just thinking about fall outfits like that! I love this purple tie-dyed dress too! Although I have not received these items yet, I will be getting the tomato tie-dyed pants which I am very excited about. They retail for $138 and look very comfortable. Why am I wearing a lab coat in the above picture? Because I am starting my dietetic internship in about 2 weeks and am going to need one for the hospitals! It is a lot thicker than most lab coats.  It's almost like a denim material which will be nice for the hospital.  I also like how it is a junior fit so that it's not super baggy on me. I've always wanted a big jewelry organizer and finally found one that I love from Longstem Productions . I was sent the Women's Over the Door Organizer in bronze.  I love it! It is nice looking enough to be able to hang it on a door and you can see all of your jewelry at once.  In fact, this can hold up to 300 pieces of jewelry!
