For the most part, I like to cook and create my own meals using my
personal healthy preferences. Some days after work though, I do not feel like
cooking. I just want something really quick to eat and end up turning to a
sandwich, a big salad or a frozen pizza.
I was recently sent a coupon for an Old El Paso frozen entrée to try. These are found in the freezer section of
most grocery stores. Entrée options include fajitas, enchiladas, quesadillas
and burritos. My husband and I love Mexican food but it often takes a long time
to prepare. These entrees are fully cooked and just need to be heated up.
With my coupon, I chose to try the chicken enchiladas to try. I love
enchiladas so I knew that this would be my best bet. They are made with corn
tortillas, white meat chicken, ancho chile sauce and Monterey Jack cheese. I
took a look at the ingredient list and do wish that it was simpler with more

The enchiladas tasted pretty good for a frozen meal. I enjoyed mine with
a side salad (always make sure to get your vegetables in for the day!). The
entrees are made to serve two people which is perfect for my husband and I.
Although I probably would not purchase these again in the future due to
the unnatural ingredients and high sodium content, I do not think that they are
the worst option if you are super busy and need a quick meal.
