MorningStar Farms Meatless Monday

I am a big fan of having meatless meals. I am not a vegetarian but have almost all of my breakfasts vegetarian, about 6 lunches vegetarian and 2-5 dinners per week vegetarian. I am all about variety and healthy eating and I enjoy incorporating MorningStar Farms products into my meals.
One of my favorite MorningStar Farms products is the Maple Flavored Veggie Sausage Patties. My favorite way to eat this is to toast a whole wheat English muffin or mini bagel, heat up the veggie patty, add some ketchup, baby spinach leaves and a bit of cheddar cheese. It is seriously delicious and very filling too!

Also, another way that I eat the Maple Flavored Veggie Sausage is with a veggie egg scramble. I cook up a bunch of vegetables (whatever I have on hand at home) and cook with some eggs, onions and black pepper. I serve the veggie sausage on the side with some sliced fresh fruit. These two meals are some of my favorites.
This past summer, I created a blog recipe using MorningStar Farms veggie burgers. I called it a Greek Veggie Burger. It was very tasty and I like making veggie burgers like this often.

Here is the recipe:
Tzatziki Greek Veggie Burger
Ingredients:
1 MorningStar Farms Mediterranean Chickpea Veggie Burger
1 whole wheat sandwich thin
3 tomato slices
5 baby spinach leaves
1-1 1/2 tablespoons tzatziki sauce (a Greek cucumber sauce)
4 sliced olives

Directions:
1. Grill veggie burger for a few minutes on each side.
2. Slice tomato and olives.
3. Add veggie burger, tomatoes, olives, spinach and tzatziki sauce on sandwich thin.
Enjoy!

This recipe only takes about 10 minutes to prepare and is super tasty. 

Another favorite feature about MorningStar Farms products is that they do not have to be defrosted ahead of time. Meat, for example, if you forget to defrost it, there is a slim chance that you will be able to eat it that day. MorningStar Farms products can be ready to eat in just a few short minutes. I like having these on hand for when I am short on time, do not feel like cooking extensively after work or just want a healthy, meat-free meal.

  1. That looks delicious! Great way to make use of the burgers! I have always wanted to try morningstar, but have never actually done it! They seem like a great, genuine company, and I really should buy their products and give them a go. You made it look so tempting, I think it is time to go for it. I know they are so nutritious, which would help my training. Thanks for the review....now I cant stop thinking about that picture :)
