I love garlic and use it in most of my recipes. I often use garlic powder or dried chopped garlic but fresh garlic really is the tastiest way to go. In some of my recent Italian meals, I have used fresh garlic and notice how much more flavor and freshness it brings to a meal.
The only problem about using fresh garlic is that it can be a pain to peel and chop. The little skins get stuck on the cloves and it is difficult to cut it into small enough pieces to use for your recipe.
