When it comes to using protein powder, I try to get creative and move beyond your typical smoothie. When coming up with ideas for this recipe, I wanted to make a summery type recipe that could be taken to a picnic, summer concert, fireworks, etc. Something that would be healthy but delicious.
Then came the idea of these protein cheesecake stuffed strawberries. They come together in about 5 minutes flat and are awesome.
Protein Cheesecake Stuffed Strawberries
1 lb of strawberries, hulled
1/2 cup plain Greek yogurt
1/4 cup light plain cream cheese
1 scoop Everlast VP vanilla protein powder
1. Combine Greek yogurt, cream cheese and vanilla protein powder and mix well.
2. Fill strawberries with "cheesecake" mixture and enjoy.
For how good these tasted, it is hard to believe that this recipe is so simple. I will be making this dip all summer and using it with different kinds of fruit.
