Vegetable Black Bean Tortilla Stack
I am so excited to share this recipe with you today! I had to make a recipe using tortillas and came up with this recipe that turned out better than ever even expected. Layers of toasted tortillas, black beans, sautéed vegetables, salsa and cheddar cheese-yum!

My whole family tried this recipe and they all enjoyed it. Funny enough, my parents just happened to stop by when we were eating so I let them try it and they both liked it. Then, I went for a walk with my sister and she had not eaten yet so I gave her the rest.

My husband could not stop raving about how good it was. He thinks it would make a great appetizer as well as a main meal. I like it because it is healthy and tastes great. The beans contain protein and fiber. The vegetables have vitamins, minerals and fiber. The cheese provides calcium and protein.

This recipe comes together in no time and took about 20 minutes to make. It looks impressive but can be made even on a busy day. I know that for us, especially during the work week, the evenings are a busy time and our dinners need to come together quickly. With this recipe, you can provide your family with a nutritious homemade meal even with a busy schedule.

Vegetable Black Bean Tortilla Stacks

Ingredients:
2 green peppers, diced
2 large tomatoes, diced
1 cup frozen corn
1 can no-salt added black beans, drained and rinsed
1/4 cup diced green onion
1/4 cup salsa
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
3/4 cup 2% shredded cheddar cheese
3 large Azteca no preservatives flour tortillas
Diced green onion and tomato to top

Directions:
1. In a frying pan, cook bell pepper and tomatoes for about 4 minutes.
2. Stir in the corn, black beans, green onion, salsa and spices and cook for another 3 minutes or so until the vegetables are soft and not much liquid remains.
3. Turn a burner on medium and toast each tortilla for about 1 minute on each side.
4. On a baking sheet, layer a tortilla, 1/3 of the bean mixture, another tortilla, 1/2 the cheese, 1/3 of the bean mixture, another tortilla, the rest of the bean mixture and top with the additional cheese
5. Broil over high heat for about 2-4 minutes or until the cheese is melted.
6. Top with diced green onion and tomato.

Enjoy! I was impressed with how well the tortilla stack stayed together when I cut it. I thought that it may be one of those recipes that tastes great but doesn't look at good on the plate but I was wrong!

For this recipe, I used Azteca no artificial preservatives flour tortillas which turned out great. They held up very well and were not soggy. They did not rip at all which is a common problem with tortillas. Without preservatives, they are a healthier option and taste great too. They have no high fructose corn syrup, artificial colors or flavors. They are located in the refrigerated aisle at your local Kroger store.

  8. I'm glad I live within walking distance of my Kroger's (Ralph's here). I had to walk home from it last year when my car battery died, charge my battery jumper and walk back, but successfully jumped my car! It's my fave grocery store by far.
