I created this spiralized pad Thai after falling in love with my spiralizer. I want to spiralize everything that I can! This recipe is quite easy to make and tastes amazing. Plus, it is so much healthier for you than typical pad Thai!

Spiralized Pad Thai


Prep Time: 10 minutes
Cook Time: 5 minutes

Servings: 4

Ingredients

    Veggie noodles
    • 1 tablespoon olive oil
    • 2 medium zucchini, spiralized
    • 3 large carrots, spiralized
    • 1 green pepper, spiralized
    • 1 small onion, spiralized
    • 1/2 head red cabbage, spiralized
    • 1 spring garlic shoot, diced
    • 1 cup bean sprouts
    Spicy peanut sauce
    • 1/4 cup peanut butter
    • 3 tablespoons soy sauce
    • 2 tablespoons rice vinegar
    • 1 teaspoon garlic powder
    • 1/2 teaspoon red pepper flakes (optional)
    Topping
    • Chopped peanuts
    • 2 diced green onions
    • Lime wedges to top

    Instructions

    1. In a large pan, heat oil.
    2. Add all vegetables besides the bean sprouts and cook for about 3 minutes until vegetables are lightly cooked. Add in bean sprouts.
    3. Meanwhile, whisk together all ingredients for peanut sauce. Pour over noodles and cook another 1-2 minutes.
    4. Top with peanuts, green onions and lime wedges.
    Enjoy!
