Back to school time can be so busy! Although I do not have a child who is in school yet, I do have a husband who is a teacher and back to school is easily the busiest time of year. A couple of years ago was especially crazy because I was due with Adalyn a couple of weeks after school started. I remember that Troy always had to have his phone nearby in case I was in labor. Luckily, Adalyn waited to come out until a Saturday morning so my husband did not have to leave school in the middle of class!!

This year, Troy is teaching 4 different subjects: honors physics, earth science, astronomy and regular physics so it is going to be a busy year. Healthy eating is important to me and I love coming up with quick and healthy dishes that will be perfect for when life is busy.


I pack Troy's lunch everyday for school and love packing hummus for healthy snacks for him. I will pack it with chips, crackers or vegetables. It is a protein packed snack that he loves and is different than just having plain chips or something.

While I was photographing this recipe, little hands snuck in and I decided to go with it! Love these teeny hands!
I have been making my own hummus for years and my favorite one is my buffalo hummus because it is spicy and flavorful. Now that we have a daughter who loves to eat hummus, I have to lower the amount of spices that I use a little bit. She actually does well with some spice but enjoys this roasted red pepper hummus even more.

This roasted red pepper hummus takes 5 minutes or less to make. It makes a great addition to a packed school lunch with vegetables, chips or pretzels. It is also great on a sandwich or wrap. After school, Troy, Adalyn and I love to sit down together, talk about our day and have a snack together and this hummus is great for that!

By the way, this hummus is more red than red pepper hummus in stores because I used more red peppers than normal for flavor and to make it a little lighter. I do not like tahini so I do not use it in my hummus. I use olive oil instead.

Roasted Red Pepper Hummus

Prep Time: 5 minutes
Serves: 8

Ingredients

  • 2 cans low-sodium garbanzo beans, drained and rinsed
  • 1 cup roasted red peppers
  • 1/3-1/2 cup olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • Juice from 1 lemon

Instructions

Blend all ingredients together until smooth. Serve with vegetables, pretzels or chips.

  2. I like making my own hummus, too. I sometimes use sunflower butter instead of tahini, if you haven't tried it yet, it is nice!! It ends up with the same mouthfeel as tahini, but doesn't have the taste! Good for you, too.
