Sheet Pan Peanut Chicken and Vegetables

Sheet Pan Peanut Chicken and Vegetables is a simple dinner cooked all on one pan for less dishes and work! Ready in 30 minutes including broccoli, bell peppers, carrots and pea pods all covered in a flavorful peanut dressing! Last year, I made sheet pan sweet and sour chicken and instantly fell in love with the whole "dinner is cooked on one pan" dinner idea! Slow Cooker Enchilada Breakfast Casserole

Slow Cooker Enchilada Breakfast Casserole is a delicious egg bake made in the crockpot with chorizo, sauteed bell peppers, tomatoes and corn tortillas! I'm not kidding, this is the best breakfast I've ever made! I finished this up at about 4 PM and had a huge slice of it. I couldn't help myself. It is so flavorful with the chorizo and the slow cooker helped to keep the eggs moist and tender- it is easy for eggs to dry out but not this one. You will absolutely love it. My family ate almost this entire recipe for dinner one night. It is great for breakfast and dinner. It is easily my new favorite recipe and I think that you will love it too. With the weather getting colder, the slow cooker has made its way out of storage and back into my kitchen! Woo hoo! I love making soup in my slow cooker, breakfast casseroles, shredded meat and much more. It certainly gets its use in our kitchen.
