Now that I am home with the kids and Troy is home for the summer, we get to eat breakfast together every day. It is amazing! When I was working, I was fine eating oatmeal 4 days per week but now that I am home and it is the summer, that just doesn't appeal to me. I have been wanting to switch things up and often ask Adalyn what she wants for breakfast and make whatever she asks for. She is a spoiled girl! We do have similar tastes in food though so it works out pretty well.

These are some of our go-to options: salsa eggs with veggies, oatmeal with peanut butter, Greek yogurt with fruit, frozen waffles and cold cereal. I have been experimenting with different toppings so that we do not get tired of what we are eating. Breakfast is my favorite meal of the day and I want to be excited about what we are having.

I decided to create these cinnamon roll waffles one morning and they were so good that I wanted to share with all of you. They are super easy and ready in just 5 minutes. Adalyn's top three favorite breakfast foods are as follows: Greek yogurt, waffles and fruit. This simple dish combines all three of her favorites so as you can imagine, she loved these so much.

I combine thick and creamy vanilla Greek yogurt with cinnamon, spread it on a toasted waffle and top with your favorite fruit. It doesn't matter what kind of fruit you use- they will all taste great. I especially think that any kind of berries, bananas, peaches, mango or kiwi would be awesome. You could even take these on-the-go, especially if you made a waffle sandwich out of them.

Cinnamon Roll Waffles


Prep Time: 5 minutes
Servings: 2
Serving Size: 2 waffles

Ingredients 

  • 4 Eggo Cinna-Toast
  • 1/2 cup vanilla Greek yogurt
  • 1/2 teaspoon cinnamon
  • 1 cup sliced fruit of choice

Instructions

1. Toast waffles in toaster until crispy.
2. Mix together Greek yogurt and cinnamon.
3. Spread cinnamon Greek yogurt over waffles and top with sliced fruit.

Eggo Cinna-Toast For this recipe, I used Kellogg’s Eggo Cinna-Toast™ Cinnamon Roll which I picked up from Walmart. They are sweet on their own and do not need additional syrup. They are ready in just a couple of minutes and I love having a box of frozen waffles in my freezer ready to go for quick breakfasts. They are now made with no artificial flavors and colors from natural sources. I especially enjoy the whole-grain versions of Eggo waffles. 


We also tried the Kellogg’s Eggo Choco-Toast™ Chocolatey Chip which were tasty as well. They make great snacks too- Adalyn with sometimes ask to eat one literally frozen- she is nuts!
