Uh oh! Here I go again with the peanut butter and jelly flavors! I'm a little obsessed with anything PB + J (Peanut Butter and Jelly Baked Oatmeal, Peanut Butter and Jelly Protein Fudge, Peanut Butter and Jelly Overnight Oats). I haven't make PB + J ice cream until now and it was time that I made some. I love making banana based ice creams because they are so creamy and delicious but actually very healthy. If you have not at least tried banana ice cream or "nice cream" as people call it, you are missing out.

I was first introduced to banana ice cream in about 2008 when I was in school to become a dietitian. We made it in one of my cooking classes and I fell in love even asking my mom to make it for my birthday dessert that year. I remember that it had just two ingredients: frozen bananas and maple syrup. It is one of my favorite things to eat and my daughters also.

I went back and forth with deciding whether to use raspberry or grape jam or jelly for this recipe. I knew that both would be delicious! I ended up going with raspberry and it was a good choice. Feel free to use whichever one you want- strawberry would be great as well. I love that you just need to blend this up in your blender and then swirl in some jelly and it is ready to go. So easy and delicious! If you want a boost of protein, feel free to add some protein powder or frozen Greek yogurt.

Peanut Butter and Jelly Banana Ice Cream

Prep Time: 5 minutes
Servings: 4

Ingredients 

  • 4 bananas, frozen in pieces
  • 1/4 cup milk
  • 1/3 cup powdered peanut butter
  • 3 tablespoons jam or jelly
  • Optional: top with peanuts

Instructions

1. Place frozen banana and peanut butter in a food processor and puree until smooth.
2. Transfer to a bowl or another container. With a spoon, swirl in jelly.
3. Serve right away or place in a container and freeze.

This recipe uses my favorite peanut butter powder: Purely Inspired Powdered Peanut Butter. I have been a fan of powdered peanut butter for years and this one is delicious. It has 90% less fat per serving than peanut butter. I do not typically use it in place of PB but like to add it to different sweet and savory dishes to use in a different way. It can give great flavor to foods. It is only made with roasted peanuts, sugar and salt and has 6 grams of protein per serving. I also like it mixed into yogurt for a peanut butter Greek yogurt, I eat it daily in my oatmeal and it is tasty in smoothies.
