I always forget how nice the weather is in the fall. In my mind, once Labor Day is over, the weather gets cold. That is not true of course! The fall in Michigan is a beautiful time of year. There are lots of different events going on and the weather isn't too hot to do them. I love visiting an apple orchard, finding different Halloween events and going to some of Troy's high school football events.

I also love cooking in the fall. Fall is the time that my Dad's fruit at the farm starts to ripen and is ready to be picked. There will be pears, apples and a bunch of grapes. The grapes are mainly used to make wine though we do get to eat some. The apples and pears are delicious and I can't wait for them to be ready.

I love making healthier ice creams and have been doing so all summer long. It is Adalyn and I's favorite treat and we switch up how we make them. We have made different kinds of banana ice creams, strawberry ice creams and much more.

This time, I wanted to make something for fall so I decided on a Caramel Apple Ice Cream. It is healthier than your typical ice cream and is made with Nancy's Whole Milk Greek Yogurt, Nancy's Organic Whole Milk Kefir, sauteed apples and a drizzle of caramel. It is so good! Enjoy this treat this fall or any time of year.

It just requires a little bit of time to let the Greek yogurt freeze. Then, you just blend the Greek yogurt with the kefir and stir in the cooked apples and drizzle it all with caramel sauce. You will love it! My daughter and I sure did.

Caramel Apple Ice Cream

Prep time: 10 minutes
Cook time: 5 minutes
Servings: 4

Ingredients:

2 cups Nancy's Whole Milk Greek Yogurt
1/2-3/4 cup Nancy's Organic Whole Milk Kefir
1 teaspoon cinnamon
2 teaspoons butter
1 large apple, finely diced
1 tablespoon brown sugar
1/2 teaspoon cinnamon
~1/4 cup caramel sauce

Instructions:

1. Freeze Greek yogurt in ice cube trays- fill each ice cube mold with Greek yogurt to the top and freeze until firm or place 1 tablespoon dollops of Greek yogurt on a baking sheet (like with cookie dough) and freeze until firm. This can be done the night before to save time.
2. Meanwhile, melt butter in a small skillet. Add in diced apple and saute until apples are soft- about 3 minutes. Add in brown sugar and cinnamon and stir well.
3. In a blender or food processor, blend frozen Greek yogurt ice cubes, kefir and cinnamon. Start with 1/2 cup kefir and add more if it needs more to fully blend. Transfer to a dish.
4. Swirl in apples and enjoy immediately with a drizzle of caramel or freeze for another 30 minutes.

I chose to use Nancy's Organic Whole Milk Kefir because it tastes great and is an excellent source of probiotics- one serving has 56 billion live probiotic cultures. I am a big supporter of eating probiotic rich foods and this one tastes awesome. I used the vanilla flavor but you could also use plain and add some vanilla flavoring and some honey or maple syrup. One serving has 10 grams of protein, only 7 grams of added sugar and 25% of your daily calcium needs. 

My daughter loves this drink so much and calls it her "vanilla drink". We were recently on vacation and had a 4 hour drive home and the whole way, all she kept telling us that she wanted when she got home was her vanilla drink. Adalyn has always been not the best at drinking milk so I love that she enjoys a calcium rich beverage such as this.

While Adalyn loved the kefir, I am especially a fan of the whole milk Greek yogurt. I like the plain flavor and I mixed a little bit of honey in it and crumbled cereal for a little snack. I love Greek yogurt!
