I love whipping out my waffle maker on mornings when I have a little bit more time because A. waffles are delicious, B. my daughter loves them and C. they look like you spent a long time making homemade waffles when really, they are quite easy! I decided to channel my love for all things fall and make these waffles using chai tea. They turned out wonderfully and have a medium chai flavor- not too strong, which is just the way that I like it.

Typically, breakfast happens with the whole family, except right now, Mama needs some alone time! Life has been SO crazy lately with some health scares (we are all okay!), our car being broken into and my purse being stolen, my phone screen shattering, our heat not working (it is working now!), etc. etc. I need a break! I know that many people have it much worse than this and trust me, I feel for you and am not complaining. What doesn't kill us makes us stronger, right?? I felt overwhelmed and stressed and now that things are calming down, I need to take a second for me and have some peace and quiet.

I'm not one for going to the spa or doing yoga or anything like that but just having an hour of alone time to make breakfast, eat it, drink some hot chai tea and catch up on reading blogs is just what this busy mama needs.

As we head into the holiday season, I am going to bet that some of you are feeling overwhelmed and stressed too. I have a little secret- if you do not want to make your own waffle mix, just pick up your favorite whole-grain mix and add the chai tea instead of the liquid that it calls for. I have done that and it turns out great as well. I like using white whole-wheat flour to make these waffles fiber and nutrient packed. I also used yogurt in them for protein and calcium. Serve them on their own or with fruit, bacon, a fried egg or whatever you like.

Chai Whole-Grain Waffles

Chai Whole-Grain Waffles are whole-wheat, light and fluffy and packed with protein and fiber and delicious warm chai spices. They can be made ahead of time and reheat well in the toaster.

INGREDIENTS


  • 2 cups white whole-wheat flour
  • 1 tablespoon baking soda
  • 1 cup plain Greek yogurt
  • 1 cup Oregon® Chai Tea The Original
  • 2 eggs
  • 1 teaspoon vanilla extract

INSTRUCTIONS


  1. Stir together all ingredients until just combined.
  2. Heat a waffle iron and spray with nonstick spray on both sides.
  3. Scoop about 1/3-1/2 cup mix onto waffle iron and cook waffles until cooked through and crispy.
  4. Continue making waffles until all of mix is used.
  5. *Can keep waffles warm in the oven at about 250 degrees while the rest of the waffles cook.

For this recipe, I used Oregon Chai The Original which I picked up from Meijer in the tea section, found right in the middle of the shelf. They also have a Slightly Sweet version and a Sugar-Free version. The Slightly Sweet is my favorite one. You can drink it iced, hot or throw it into a recipe like I did. I just skipped the regular liquids that go into a waffle recipe and used this chai tea instead. They turned out perfectly!

This chai tea latte is great in this recipe of course but it is also really good on its own. I like it heated up in a mug on these cold days that we have been having. The Original and Slightly Sweet are organic. Chai tea lattes are an indulgent and can be a better-for-you alternative that offer gourmet and trendy flavor profiles that increase the quality of the tea drinking experience.
