I kept this Greek Appetizer Platter super simple by visiting my local grocery store's olive bar where I picked up the Greek olive mix and the vegetarian stuffed grape leaves.

Slow Cooker Enchilada Breakfast Casserole is a delicious egg bake made in the crockpot with chorizo, sauteed bell peppers, tomatoes and corn tortillas! I'm not kidding, this is the best breakfast I've ever made! I finished this up at about 4 PM and had a huge slice of it. I couldn't help myself. It is so flavorful with the chorizo and the slow cooker helped to keep the eggs moist and tender- it is easy for eggs to dry out but not this one. You will absolutely love it. Oliver Richard 6 Month Update

6 months old!! I feel like what I am supposed to say is that it has gone so fast but honestly, I feel like I can barely remember life without two kids- it feels like Oliver has been around forever. Life is good this month and things have been really fun. The big change is that Troy went back to work so I have been navigating life at home with the kids and I. It has been awesome. Just a note about staying at home with the kids- it is not something that I ever dreamed of or desired but after god showing me MANY times that this was what was right for our family and making the change, I am very happy. I feel like I've been the mom that I want to be with the kids which makes me very happy. We are having a blast together each day!
