I am all about sheet pan dinners because they always taste awesome and are so easy! I have made so many sheet pan meals including Sheet Pan Peanut Chicken and Vegetables, Sheet Pan Lemon Artichoke Chicken and Sheet Pan Sweet and Sour Chicken. Also notable is my Roasted Root Vegetables with Spicy Balsamic Drizzle. I can't stop! All you have to do is chop some vegetables and sausage and throw it all on a sheet pan and throw it in the oven. It doesn't get easier than that!

This is my first time trying apples in a sheet pan dinner and they turned out awesome! I decided to roast the sweet potatoes first for 15 minutes before putting any of the other foods in the oven to make sure that they would get soft enough and so that the rest of the food would not burn while waiting for the sweet potatoes to cook. It turned out perfectly!

The apples turned out perfectly soft but not too mushy. I would recommend only having the apples in the oven for the 15 minutes so that they aren't too soft. The apples gave the perfect sweetness which complimented the rest of the meal so much! I also used a spicy jalapeno turkey sausage for this sheet pan meal. If you can find this in your store, I highly recommend it!

This is the perfect meal to make while it isn't super hot outside as it may help heat your house a bit. In the summer, you can still make this dish by tossing it in a foil packet and cooking on the grill. This recipe was such a hit for my entire family. My 3 year old had a third bowl of everything- each of these items are her very favorite foods! My baby ate everything finely chopped up and loved it. My husband is not typically the biggest fan of fruit and he said that he really enjoyed the apples in here.

INGREDIENTS

  • 2 tablespoons olive oil
  • 2 sweet potatoes, diced
  • 12 ounces turkey sausage, cut into pieces
  • 2 golden delicious apples, diced
  • 1 pound Brussels sprouts, halved if large
  • 1 red bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper

INSTRUCTIONS

  1. Preheat oven to 400 degrees. 
  2. Toss sweet potatoes in 1 tablespoon of olive oil and roast in oven for 15 minutes.
  3. Remove from oven and add the sausage, apples, red pepper and Brussels sprouts to pan and toss with remaining 1 tablespoon of olive oil. Return to oven and roast for 15 more minutes.
  4. Remove pan from oven and toss with spices.
