Pumpkin Soup


Troy and I went to my parents house this weekend.  My mom made this awesome pumpkin soup made with frozen pureed pumpkin that was from homegrown pumpkins from last fall.

First, she chopped up some onion and carrots and stir fried them. 

Then, the frozen pureed pumpkin was cooked and chopped raw potatoes were added.
Spices such as cinnamon, pepper, salt, etc.

The final product with some shredded pepperjack cheese, low-far sour cream, sliced green onions, and piece of bread with butter on the side!

It was a great soup, easy to make, and everyone liked it!
