Fresh Summer Vegetarian Tacos

I'm a huge fan of Mexican food but sometimes, it can be very high in calories and fat. This recipe is easy to make and is very healthy!
 Ingredients: Serves two
-1 chopped tomato
-Handful of chopped romaine
-1/4 cup shredded purple cabbage
-2 tablespoons chopped green onions
-4 flour tortillas
-1/2 can of refried beans
-1 tablespoon sour cream
-1/4 cup shredded cheese (I used cheddar)


Directions:
1. Open can of refried beans and dish out half of it into a dish and heat.
2. Meanwhile, chop tomato, lettuce, purple cabbage, and green onion.
3. Toast tortillas on an open flame. Note: watch these carefully as they can burn quickly.
4. To eat: take a tortilla and fill with beans, a sprinkle of cheese, a little salsa and sour cream, and a hefty serving of vegetables. 
This meal is easy, healthy, and delicious! I highly recommend it. My husband who loves meat even likes this vegetarian dish. Pair with a margarita or a light beer for a refreshing summer beverage!

  2. Great recipe, i love when meat eaters enjoy vegetarian food. I sometimes like to substitute the refried beans with stir fried mushrooms and taco seasoning.Not sure how Mexican mushrooms are but that's ok :)
