Lemon Feta Kale Salad

Part 2 of my Euphrates feta recipes is a little snack I made for myself. I've started to enjoy kale now that I know how to prepare it correctly.  This recipe takes about 2 minutes to prepare and tastes great!

Ingredients:
-4 large kale leaves
-1/4 lemon
-1 ounce Euphrates feta cheese

Directions:
1. Tear kale into bite sized pieces. Discard stem.
2. Squeeze lemon juice onto kale and sprinkle feta on.
3. This step is important if you really want the kale to absorb the flavors: massage the feta and lemon into kale for about 30 seconds-1 minute.

Enjoy!
 Kale is full of vitamins making this a very healthy snack.
If I had avocado on hand, I would massage that in too! Euphrates feta tastes great and is low in calories and fat compared to other cheeses. Try it!

  1. I'm a very odd person and I LOVE my greens! I'm pretty sure I've tried Kale before, but I can't be 100% positive. Either way, that looks so very yummy :)
