Village Harvest Wheatberry & Barley Feta Salad

Recently, I was sent a bunch of varieties of Village Harvest products to try out.  They are frozen whole grains and only take a couple minutes to heat up and then are ready to serve.  The reason that I was most interested in trying this out is because I had never tried farro or wheatberries. I love trying new-to-me foods and could not wait to try these.

Also, something awesome is that I was reading my Academy of Nutrition and Dietetics magazine (formerly known as the American Dietetic Association) and these products were in there. They were saying how great these are. Of course I already knew that they were healthy but that's really cool to be endorsed by the AND! 

Most of these products are whole grains and have nothing else added. There is no added salt or fat which is nice because you can add your own flavorings and make it as healthy as you want it.  The wheatberries and barley was awesome. It took just 2 minutes to heat in my microwave and was ready to eat. The grains were chewy and tasty. Also, these grains are kept in the freezer and are not stuck together. They are frozen individually which is nice.


Wheatberry & Barley Feta Salad

This is the easiest and quickest recipe you will ever make. This Village Harvest Wheatberry and Barley mix heats up in 2 minutes and the rest of the prep only takes about two minutes. 

Ingredients:
1 package of Village Harvest Wheatberries and Barley
1/4 cup feta cheese
1 tablespoon red wine vinegar
2 teaspoons olive oil
Dash of garlic and onion powder

Directions:
1. Empty package of grains into a bowl and heat for 1 1/2 minutes-2 minutes until warm-hot.
2. Crumble feta on top of grains and add vinegar, spices, and oil.
3. Mix well and serve. This can be served warm or cold. 

My husband and I both really enjoyed this simple grain salad and the chewiness of the grains. We would definitely make this again using Village Harvest products; especially for the extreme convenience!
