Banana Protein Pancakes with Magimix Food Processor

All the ingredients ready to be blended in my Magimix.

I recently wrote about how much I love my new Magimix Food Processor. It is the 3200XL 12 cup food processor.

Last weekend, I created a pancake recipe off of several that I had seen on the internet.

Banana Protein Pancakes

Ingredients:
1 1/2 cups old fashioned oats
1 cup low-fat cottage cheese
4 eggs
1 teaspoon baking powder
2 bananas (I had mine frozen and defrosted them. They would probably be best fresh though)
1 teaspoon vanilla
1 teaspoon cinnamon

Directions:
1. Blend all ingredients well in a food processor.
2. Cook pancakes in a nonstick pan on medium heat.
Enjoy!

This recipe serves 2-3 people. It turned out quite well. I had started off with using 1 cup of oats but it was not sticking together well enough so I added another 1/2 cup. These are much more filling than regular pancakes due to the cottage cheese and extra eggs.

I love foods like pancakes and waffles but hate that they are typically not whole grain or are very filling. This version is whole grain and kept me full for a few hours.

The Magimix did a great job of blending the batter well. It did not have any chunks which was great.
