Salad Nicoise and Heinz Vinegar

My mom has been making Salad Nicoise for years and it is easily one of my favorite recipes. I had a craving for this salad the other day and this is what I came up with. Typical salad nicoise contains tuna, salmon and eggs but this version does not. You could always add those ingredients on top if you wish. This salad nicoise is vegan, gluten-free and very healthy.

I participated in a campaign on behalf of Mom Central Consulting for Heinz Vinegar. I received a product sample to facilitate my review and as a thank you for participating.

Salad Nicoise

Serves: 1

Prep and cook time: 10 minutes

Ingredients:

Salad:
1 medium baked potato, diced
1 medium tomato, chopped (I used red and yellow tomato)
3 low-sodium olives, chopped
1/2 cup raw green beans, chopped
1/2 cup red romaine lettuce, torn into bite sized pieces
1 green onion, diced

Dressing:
1 tablespoon Heinz Filtered Apple Cider Vinegar
1/4 tsp garlic powder
1/2 tsp Dijon mustard
1/4 tsp black pepper

Directions:
1. Whisk together all ingredients for dressing.
2. Mix together all ingredients for salad.
3. Top salad with dressing and serve.

This simple summertime salad was delicious! Using fresh ingredients really added flavor to the recipe. For protein, add beans, chicken, tuna, salmon or hard boiled eggs.

This post is sponsored by Heinz vinegar. Heinz apple cider vinegar comes in two varieties: filtered and unfiltered. I have been a huge vinegar fan for years. I was even jokingly called the Vinegar Queen by my family. Up until a few years ago, vinegar is the only salad dressing I liked. Now, I add a bit of oil or other flavorings to my vinegar since on it's own, it is a bit sour for me. I use vinegar for everything including dressings, marinades, pickling, on any vegetables, on my spinach pie, etc. I think that all kinds of vinegar are delicious.

Many people swear by the benefits of apple cider vinegar. It is not scientifically proven that apple cider vinegar provides certain health benefits but there are some things that are for sure. Apple cider vinegar is very low in calories, is fat free and makes a great addition to many recipes and is also used for cleaning.

If you do not currently use apple cider vinegar, I highly recommend incorporating it into your recipes. Check out the new Heinz vinegar Pinterest page.
