Black Bean Burgers with Spicy Grilled Vegetables

If you've been reading this blog for awhile, then you know how much I love MorningStar Farms Spicy Black Bean Burgers. They are my very favorite veggie burger. They are so delicious and you will not miss the meat at all.

Troy and I are not vegetarians but we love to include many vegetarian meals in our diet. It is healthier, less expensive, less time consuming than if we forgot to defrost meat and need a meal quickly and are often tastier. We eat veggie burgers about once per week for dinner. I take them about 2-3 times per week for work for lunch on top of a bed of salad or roasted vegetables.

Chipotle Black Bean Burgers
Last year, I shared my recipe for chipotle black bean burgers using the recipe that the corporate chef from my job shared with me. The corporate chef and corporate dietitian from my work are two meat-loving men and they both like this veggie burger if that tells you something.

 For this meal, we used the MorningStar Farms veggie burgers along with grilled veggies for an awesome meal. What is awesome about veggie burgers is they taste great to everyone but can meet different people's dietary needs. For example, my sister is not eating beef or pork now so if we have her over and are having one of those meats, we make her something else which is often a veggie burger.


Spicy Black Bean Burgers with Creamy Avocado Ranch Dressing

Serves: 2

Ingredients:
2 MorningStar Farms Spicy Black Bean Burgers
2 everything bagels
1 sliced tomato
Red onion slices
2 large lettuce leaves
Sliced pepper jack cheese

For the creamy avocado ranch dressing:
2 tablespoons plain Greek yogurt
1 avocado, pitted and taken out of skin
1 lime, juiced
2 tablespoons fresh cilantro
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder

Directions: 
1. Grill black bean burgers according to directions.
2. Blend all ingredients for the dressing together. 
3. Toast bagels and top with black bean burgers, cheese, vegetables and sauce. 
Enjoy!


Spicy Mexican Grilled Vegetables

Ingredients:
Baby squash
Portobello mushrooms
Green beans
Asparagus
Eggplant
2 tablespoons olive oil
2 tsp chili powder
2 tsp garlic powder
1 tsp onion powder
2 tsp cumin
1/4 tsp cayenne pepper
*My husband topped ours with black sesame seeds since he is obsessed- not required though!

Directions: Toss all ingredients together and grill. If you have one, use a grill mat so that food does not fall through. If not, aluminum foil will work. Enjoy!
