This Grilled Romaine Buffalo Chicken Salad is easy to make and makes the perfect easy meal!

As I wrote about before, I love Aldi. I shop there for most of my groceries besides produce (I do buy some produce from Aldi but go to a fruit and vegetable market as well to get everything that I need. I wanted to create a recipe using all Aldi ingredients.
I have been wanting to grill romaine lettuce for at least a couple of years and finally got to do so. It is quite unique. The romaine stays crisp but gets that delicious smoky, grilled flavor. I would definitely make it again.
We had my sister Natalie over for dinner and she enjoyed this recipe as well. My husband could not stop raving about how good it was. It is simple too and only takes about 15-20 minutes to make.
This recipe is not only delicious but it is also affordable. I used all Aldi products including their romaine hearts ($1.99 for 3), Burman's hot sauce ($0.85), Happy Farms blue cheese crumles ($1.99-great deal for blue cheese), Kirkwood frozen chicken breasts ($6.99 for 48 oz) and Aldi ranch and corn on the cob.
Grilled Romaine Buffalo Chicken Salad
Romaine hearts, sliced in half the longways
Olive oil spray
Boneless, skinless chicken breasts
Blue cheese crumbles
Light ranch dressing
Side dish- grilled corn on the cob
1. Trim chicken breasts and marinate in hot sauce for a few hours.
2. Fire up the grill and cook chicken breasts and corn and flip once cooked.
3. Spray romaine hearts with olive oil and place on grill. Cook each side for about 3 minutes.
4. Once chicken is fully cooked, remove all food from grill.
5. Take a grilled romaine heart and drizzle with ranch, additional hot sauce to taste and blue cheese crumbles.
This recipe is perfect for summer. It is fresh, grilled, quick and delicious. The three of us adults absolutely loved it and I would make it again. My sister said that I need to make it for my parents because they would love it.
