This Grilled Vegetable Sandwich with Black Bean Hummus is packed full of flavor and makes the perfect healthy lunch!
In the summer, I try to eat as many fresh vegetables as possible. Troy and I have been homemade hummus obsessed lately and every weekend, I find myself making a new batch. I usually stick to hummus made with chickpeas but wanted to try something different. This black bean hummus turned out awesome and I will make it again.
This sandwich was a lot more involved than what we would usually have for lunch but was so worth it. Troy ate two sandwiches and was talking the whole time about how great they were- win!
Grilled Vegetable Sandwich with Black Bean Hummus
Makes: 2 sandwiches + lots of hummus
Black Bean Hummus
2 cans blacks beans, rinsed well
Juice from 1 lime
~2 tablespoons oil
2 tsp garlic powder
1 tsp cayenne pepper
2 tsp cumin
1/2 fresh tomato
4 slices of Brownberry Healthfull bread
1 large red bell pepper cut into large pieces
1/2 onion, sliced
Monterrey jack cheese slices
1. For the black bean hummus, blend all ingredients together well.
2. Drizzle red pepper and onion in a bit of olive oil and grill vegetables.
3. Meanwhile, assemble sandwiches with a heavy spread of hummus, cheese, jalepenos, olives, spinach and tomatoes.
4. Once pepper and onions are cooked, add to the sandwich.
5. Cook sandwich either on a panini grill or on a pan until toasted.
Enjoy! This sandwich was a favorite and we would make it again.
For this recipe, we used Brownberry Healthfull bread which was awesome. I picked it up at my local Kroger and it comes in 3 different varieties. They come in flax and sunflower, steel cut oats and honey and nuts and seeds. We love the flax and sunflower so far! Each slice has only 80 calories and is made with whole grain flour and is rich in fiber.
The bread was perfectly soft before it was toasted and worked very well in this sandwich. My husband and I both enjoyed it.
