Grilling is my favorite thing in the summer. Creating recipes using summer fresh produce is the best. We have a gas grill and until this point, I had never used charcoal. We have two parks in our city that we are able to use since we pay taxes. They both have little charcoal grills all over the park property.
I always thought that it was neat to see people grilling but never did it myself until now. Troy and I bought some charcoal and lighter fluid and brought Adalyn and my sister to the park to try it out.
You can top these with some of the sauce or eat as is. They are plenty flavorful.
We had a great time walking around our local park and having fun while the food was grilling. Adalyn loved playing on her blanket and eating some of the chicken.
Grilled Spicy Honey Lime Chicken Kebabs
1 lb boneless skinless chicken breasts, trimmed and cubed
1/4 cup honey
1 tsp chipotle powder
2 tsp garlic powder
Juice from 1 medium lime
Choice of vegetables: zucchini, peppers, mushrooms, onions, tomatoes, etc. cut into bite sized pieces
1. Soak skewers in water so that they do not burn.
2. Alternate different kinds of vegetables and chicken and skewer them onto sticks.
3. Marinate in honey, lime, garlic and chipotle for a few hours.
4. Grill over charcoal until cooked.
Adalyn thought the chicken was awesome ; ). Kebabs are the best! I love having a bite of each kind of food. This is one of Troy's favorite meals too. The sweet, tart and spicy flavors worked really well together. I would make these again. My sister loved them as well.
