This delicious caramel apple pumpkin parfait is easy to make and full of fall flavors! Filled with fresh apples, pecans, pumpkin yogurt, granola and caramel sauce.
Kroger used to be a store that I thought didn't carry enough healthy foods and I thought it was too expensive. Over the last 3 years, my thoughts have really changed and I love shopping at Kroger. I am lucky enough to have one within a mile of my home so we often walk there if we need groceries with the stroller and just load up the bottom with our purchases.
Kroger has an especially awesome natural foods section. Every time I go there, there are more and more brands being featured- many of the awesome smaller companies that I have tried for blog reviews. I get excited to see all of the fun and healthy products that they carry.
My Kroger is a smaller store and doesn't have too huge of a natural foods section but it is big enough. The Kroger by my work (also less than a mile!) has a larger natural foods section that is awesome. I am honestly so thrilled to have a great grocery store so close to me. I visit at least once per week.
I purchased some Noosa yoghurt- OMG so creamy- as well as some Kashi cereal to make this caramel apple pumpkin parfait to share with you. It turned out so, so good. My daughter and I shared one for breakfast and it was fabulous. So many fall flavors in one.
Caramel Apple Pumpkin Parfaits
Serving size: 1 parfait
Prep time: 10 minutes
1 large golden delicious apple, diced
6 ounces of pumpkin Greek yoghurt
1/4 teaspoon cinnamon
1/2 cup canned pumpkin
1 cup granola
1 tablespoon pecans, chopped
2 teaspoons caramel sauce
1. In a small saucepan, add diced apple and about 2 tablespoons of water and cook until apple is soft.
2. Meanwhile, mix together cinnamon, pumpkin and yogurt.
3. Layer yogurt, granola and apple until all ingredients run out.
4. Top with chopped pecan and caramel sauce.
These were so flavorful and I loved the rich and creamy Noosa yogurt as well as the crunchy Kashi cereal. Feel free to use any kind of apples that you have on hand for this recipe.
