This chopped salad gives you a burst of each flavor in every bite! Make this with whichever ingredients you have on hand.
The thing that I am pretty adamant about is having produce for every meal. I almost always have some kind of fruit with breakfast and if not, for my morning snack. For lunch and dinner, we always have a vegetable. I love fresh produce and it never feels like a chore to eat it. To me, good nutrition is all about balance.
Avocado, Corn and Feta Chopped SaladIngredients:
~5 cups romaine lettuce, finely chopped
1 tomato, chopped
1 bell pepper, chopped
1 avocado, cubes
3/4 cup frozen corn
1/4 cup crumbled feta cheese
2 tablespoons green onions, diced
1/4 cup olive oil
1/4 cup lime juice
1 teaspoon lime zest
1/4 teaspoon garlic powder
1/2 teaspoon black pepper
Directions: Whisk all ingredients for the dressing together. Mix all salad ingredients together and top with homemade dressing. Enjoy!
