I have the perfect easy holiday appetizer to share with you! I made this dish before I went up north with my family and brought it for a little snack for everyone and everyone really enjoyed it! These Tomato Pesto Cream Cheese Crostini are so easy to make, require really no cooking skill and are ready in 15 minutes!

These Tomato Pesto Cream Cheese Crostini are perfect for a holiday party because they are delicious, don't require hours spent in the kitchen, are affordable to make and of course, are red and green like Christmas! I served them on a star plate to be in the spirit of the holidays. If you're asked to bring an appetizer to a holiday party, these Tomato Pesto Cream Cheese Crostini would be perfect!

What I did was sprayed sliced French baguette with a bit of oil spray and sprinkled them with lots of garlic powder. Toast them in the oven until moderately crispy. Top with whipped cream cheese, prepared pesto and a mixture of RO*TEL tomatoes and fresh parsley.

Now the option is yours if you want to heat them a bit further in the oven to get the pesto, tomatoes and cream cheese warm or eat as is. I tried both ways and liked them equally!


Tomato Pesto Cream Cheese Toasts
Yield: serves a crowd 

Tomato Pesto Cream Cheese Crostini

Tomato Pesto Cream Cheese Crostini are the perfect easy appetizer that are ready in just 15 minutes! They are great to serve at a party and will impress guests.
Prep Time:  7 minutes Cook time: 8 minutes Total time: 15 minutes

INGREDIENTS

  • 1 large French baguette, sliced into 1/2 inch slices
  • Oil spray
  • 2 teaspoons garlic powder
  • 1/2 cup whipped cream cheese
  • 1/2 cup high-quality pesto
  • 2 cans RO*TEL Original Diced Tomatoes and Green Chilies, well drained
  • 2 tablespoons parsley

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Spray bread with oil spray to lightly coat. Sprinkle with garlic powder and bake in the oven for 8 minutes until breads are toasted.
  2. Remove from oven and spread with cream cheese, then pesto. 
  3. Mix together tomatoes and parsley and spoon onto toasts. 
  4. Optional: breads can be eaten cold or heated in the oven for about 5 minutes to warm ingredients.
