Bacon Fried Mushroom Hummus Soup

Bacon Fried Mushroom Hummus Soup
You might look at the title of this recipe and think that it sounds crazy.  Before you blow it off, please listen! This soup is amazing, easy to make, and filling. Try it! I had a bunch of leftover homemade hummus to use up so I turned it into a soup.

Ingredients:
2 1/2 cups hummus (see my Spicy Basil Hummus recipe) or you can probably use store bought hummus
1 1/2 cups chicken broth
3 slices of chopped thick cut maple bacon
1/2 chopped onion
6-8 small portobella mushrooms

1. Add hummus and broth to a pot.  Heat on medium and stir every couple of minutes.
2. Meanwhile, in a medium sized nonstick pan, cook bacon, onions, and mushrooms until bacon is crispy.
3. Heat hummus and broth until hot and add additional liquid if soup is too thick. 
4. Pour yourself a bowl of soup and top with the onion, bacon, mushroom mixture.

My husband and I loved this soup and I would make it again in a heartbeat.  You could individually taste all of the flavors of each food which made it even better.  Now I know what to do with my leftover hummus from now on!
