Feta Egg Wrap

This is my 4th and final recipe of my Euphrates feta series.  I made this quick and easy wrap the other day for breakfast and found a new favorite go-to breakfast!

Ingredients:
-1 small tortilla or 1/2 of a large one (I used Tumaro's low carb salsa wraps...these are awesome!)
-A few cherry tomatoes or 1/4 whole tomato chopped
-1 large egg
-1 tablespoon or so feta cheese

Directions:
1. Cut cherry tomatoes in half.
2. Pan fry egg and tomatoes until just cooked.
3. Toast tortilla over open flame right on the burner (be careful not to burn!).
4. Fill toasted tortilla with egg (cut it half so it fits), pan fried cherry tomatoes, and feta cheese.
Enjoy immediately!

This breakfast only takes about 5 minutes maximum and actually kept me full for a few hours. It was delicious!

  3. I love feta cheese! This looks great, I've got feta in the fridge right now, and I think I just might whip this up for brunch! My boyfriend hates feta cheese, but I always have it. I shop at GFS in Schaumburg and they sell feta crumbles in a huge zip loc baggie, I always pick one up when I'm there.....I love it in salads, on pizza or just right out of the bag on a cracker....I also love to mix it with cherry tomatoes, onions and balsamic vinagrette dressing just to snack on!
