Gluten Free Macaroni and Cheese with Melt Butter

I was recently sent a new to me butter called Melt. It is organic and made with some interesting oils. Melt's made of virgin coconut oil, flax seed oil, palm fruit oil and canola oil and supports digestive wellness, optimal nutrition absorption and healthy weight. It's sold in stores such as Whole Foods, Fred Meyer, King Soopers, Albertsons and Sprouts.

I really love this butter. It has a light coconut flavor but not too intrusive. I love it on garlic bagels!  It is very good on sweet items such as pancakes and savory items like the macaroni and cheese below. I love how much healthier it is for you than other butters too.

Gluten Free Macaroni and Cheese

Ingredients
1 pound gluten free pasta (I used corn pasta)
2 tablespoons Melt butter
1 1/4 cups sharp shredded cheddar cheese

Directions
1. Boil water and add pasta. Cook until al dente.
2. Drain and return pasta to pot.
3. Add Melt butter and stir in.
4. Add sharp cheddar cheese and stir until melted.
**Enjoy with additional toppings if wanted. I used black pepper and red pepper flakes. My husband added some grilled chicken, salsa, and hot sauce.
