Thanksgiving with Country Crock


Thanksgiving is one of my favorite holidays for two main reasons: the food and the shopping. I look forward to shopping both on Thanksgiving day with my dad and on Black Friday.  Meanwhile, my mom is busy at home preparing the food.

Now that my husband and I have moved back near everyone we know, we can help with the Thanksgiving preparation.  I created two recipes that use Country Crock® Calcium Plus Vitamin D. I like this product because it it healthier for you than many other similar products and tastes great.


Garlic Mashed Potatoes
Ingredients: 
2 lbs red potatoes 
5 cloves fresh garlic
1/4 cup light sour cream
3 tablespoons Country Crock® Calcium Plus Vitamin D
2 tablespoons skim milk

Directions: 
1. Cook potatoes either in the microwave or the oven. I chose the microwave to save time.
2. Chop garlic finely and saute in a pan with 1 tablespoon of the Country Crock.
3. Once potatoes are cooked, smash them with a fork until mashed consistency.
4. Add sour cream, Country Crock and skim milk.
5. Mix well and serve.
This recipe turned out very tasty and rich tasting even though healthier ingredients were used!


Peanut Butter Pecan Cookies
Ingredients:
1/2 cup peanut butter
2 eggs
3 tablespoons Country Crock® Calcium Plus Vitamin D
5 tablespoons water
2 teaspoons vanilla
2 tablespoons peach butter (can also use applesauce or apple butter)
1 cup white sugar
1/2 cup crushed glazed cinnamon pecans (can use regular pecans)
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda


Directions:
1. Preheat oven to 350°F and lightly cover 2 baking sheets with nonstick spray or use nonstick pans.
2. Combine sugar, peanut butter, Country Crock, peach butter, eggs and vanilla in a mixing bowl; add water and beat with an electric mixer until smooth. 
3. Stir together flour, baking powder, crushed pecans and baking soda. 
4. Stir the dry ingredients into the sugar mixture.
5. Roll the dough between your palms into 1-inch balls. Place 2 inches apart on the prepared baking sheets. Flatten the cookies with a fork, dipping it into flour if it begins to stick to the dough.
6. Bake the cookies until golden or about 8 to 10 minutes. 
These cookies turned out fluffier and lighter than I expected. They were tasty and I love they they use 100% whole wheat flour.
