Cucumbers blew up last summer as the hot new viral food trend but my family has been eating cucumbers in many ways my entire life! These Spicy Peanut Cucumbers are delicious and feature thinly sliced crispy cucumbers in an easy-to-make peanut sauce with crunchy peanuts. It's so good and takes just 5 minutes to make.

In the summer, we grow our own cucumbers and, most years, we have so many cucumbers that we have to get really creative to enjoy them in different ways. We do a lot of tomato cucumber salad with vinaigrette, Asian marinated cucumbers with soy sauce and vinegar, creamy cucumbers with dill and. of course, these Spicy Peanut Cucumbers!

Spicy Peanut Cucumber Ingredients

  • English cucumbers- or whatever kind of cucumber you like
  • Peanut butter
  • Soy sauce
  • Red pepper flakes
  • Rice vinegar
  • Garlic powder (or you can use fresh minced garlic if you prefer)
  • Sesame seeds
  • Crushed peanuts

How to make Spicy Peanut Cucumbers

Spicy Peanut Cucumbers are super easy to make! Just thinly slice the cucumber. Use a mandoline slicer if you dare but I'm scared of them ever since I had a little accident with one! Toss all of the ingredients together and top with crushed peanuts. Enjoy right away or within a couple of hours.

Peanuts and peanut butter are the best! We especially go through peanut butter in our home and love topping our food with peanuts often. Not only are peanuts and peanut butter delicious, they are also packed with nutrients. 
  • Peanuts are beneficial for brain health! Just a 1 ounce serving of peanuts a day (about a handful) can help increase focus, reduce stress and improve cognitive health and happiness. 
  • Peanuts contain resveratrol and p-coumaric acid, which can help with memory, executive function and processing speed and can help reduce cortisol, anxiety and depressive levels.
  • I love that peanuts are a good source of protein! One serving of peanuts has 7.3 grams of protein, healthy fats, fiber and vitamins and minerals.

  1.  Mix all of the ingredients together in a large bowl or quart sized mason jar well and serve. Eat within a couple hours of making.
