These Spicy Peanut Cucumbers are delicious and feature thinly sliced crispy cucumbers in an easy-to-make peanut sauce with crunchy peanuts. It's so good and takes just 5 minutes to make.

In the summer, we grow our own cucumbers and, most years, we have so many cucumbers that we have to get really creative to enjoy them in different ways. We do a lot of tomato cucumber salad with vinaigrette, Asian marinated cucumbers with soy sauce and vinegar, creamy cucumbers with dill and. of course, these Spicy Peanut Cucumbers!
Spicy Peanut Cucumber Ingredients
- English cucumbers- or whatever kind of cucumber you like
- Peanut butter
- Soy sauce
- Red pepper flakes
- Rice vinegar
- Garlic powder (or you can use fresh minced garlic if you prefer)
- Sesame seeds
- Crushed peanuts

Spicy Peanut Cucumbers
INGREDIENTS
- 2 English cucumbers, thinly sliced
- 1/4 cup melted smooth peanut butter
- 1/4 cup rice vinegar
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon (or more to taste) red pepper flakes
- 2 teaspoons sesame seeds
- 3 tablespoons chopped roasted peanuts
INSTRUCTIONS
- Mix all of the ingredients together in a large bowl or quart sized mason jar well and serve. Eat within a couple hours of making.
