Summer is finally here and that means lots of meals made on the grill! These Grilled Pork Tacos with Mango Salsa are sure to be a summer favorite. They feature grilled blackened pork with a delicious smoky dry rub on them along with a fresh mango pico de gallo with cilantro, onions, mango and more. These tacos are loaded with flavor and make such a great meal for summer gatherings. I highly recommend doubling the batch of pico de gallo to enjoy with tortilla chips later.

I'm not kidding you when I say that this is one of the best recipes that I have ever made. These tacos are so full of flavor and are fresh and delicious. The meat is loaded with flavor from the heavy spice rub which is complimented by all of the fresh flavors from the mango salsa. All I have to say is you're going to want to make these this summer!

How to Make Pork Tacos

These pork tacos are super easy to make! Just toss the pork in the dry rub and grill until the pork reaches an internal temperature of 145 degrees F. Meanwhile, chop up your ingredients for the mango pico de gallo. You can either grill your tortillas or toast them on a gas stove until they are a little crispy. Slice the pork, add it to your tortillas and top with mango salsa. A super easy recipe!

Pork can get a bad rap! Lean pork is actually packed with nutrients and can make a great meal option. I love cooking with pork tenderloin which is quite lean and with pork loin which I trim off the extra fat before cooking with it. Pork is packed with nutrients such as protein, niacin, thiamin, vitamin B6, zinc, riboflavin and more.

Just a 3-ounce serving of pork has 22 grams of protein. I have 3 growing kids that are super active and we often chat about the importance of protein for their bodies. They all love these grilled pork tacos and enjoy eating a variety of recipes using pork. Something that I just learned is that pork tenderloin is as lean as boneless, skinless chicken breast. So it's a great, lean protein option!

Grilled Pork Tacos with Mango Salsa

Yield: serves 6 

Grilled Pork Tacos with Mango Salsa

Grilled Pork Tacos with Mango Salsa are loaded with grilled pork with a delicious smoky dry rub, fresh mango pico de gallo and served in toasted corn tortillas!

Prep Time: 20 minutes Cook time: 10 minutes Total time: 30 mins

INGREDIENTS

  • 1 1/2 pounds pork tenderloin, cut into 1/2-inch slices like pork chops
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • Corn tortillas
  • Mango Salsa
  • 1 large mango, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/3 cup red onion, diced
  • 1/2 cup finely chopped cilantro
  • Juice from 1 lime
  • 1/2 teaspoon salt

INSTRUCTIONS

  1. In a small bowl, mix together all of the spices for the pork rub. Sprinkle the rub all over each piece of pork fully coating each side. 
  2. Grill the pork on medium-high heat for about 4 minutes per side (flip with grill tongs) until the pork has an internal temperature of at least 145 degrees and has some char spots.
  3. In a large bowl, mix together all of the ingredients for the mango salsa.
  4. Toast the corn tortillas for about 30 seconds per side either on the grill or on a gas stove.
  5. Once you remove the pork from the grill, let it rest for 5 minutes. Then, cut it into very thin strips.
  6. To serve, load a tortilla with sliced pork and mango salsa. Top with extra lime juice if you wish.
