Healthy Banana Chocolate Peanut Butter Cookies

I'm not the best baker in the world but I do like to experiment. I recently came up with this recipe for super healthy cookies and I am so excited about it.

These Healthy Banana Chocolate Peanut Butter Cookies are:
-gluten-free
-have no added sugar
-high in fiber
-high in protein
-rich in omega-3
-great tasting!


Healthy Banana Chocolate Peanut Butter Cookies

Ingredients: 
2 1/2 cups oats
2 extra large bananas
1 cup peanut butter powder (such as PB2)
46 grams chocolate protein powder (~2 scoops)
1/2 cup Silk soymilk
2 tablespoons ground flaxseed

Directions:
1. Mash banana until finely mashed (or puree in a blender).
2. Combine all ingredients and mix together well.
3. Preheat oven to 350 degrees.
4. Form dough into cookies and bake for ~10 minutes until cookies are cooked through.
Enjoy!


I love how simple these cookies are! They taste great and make a good breakfast or snack. I shared some with my mom who really liked them. If you like your cookies chewier, take them out a couple minutes sooner- I planned to but the little one needed my attention.

Lately, I have been loving to use soymilk in my recipes instead of cow's milk. It does not change the flavor compared to cow's milk and is full of nutrients. Along with soy milk, I am a fan of other soy products such as veggie burgers, tofu (my recent obsession), edamame and other soy substitutes. April is National Soyfoods Month so feel free to celebrate by having one of your favorite soy products.

Along with a healthy diet, soyfoods can be a healthy choice. Soy milk for example is rich in protein, calcium and vitamins A and D. When you swap out something like a veggie burger for meat, you usually reduce the amount of total fat, saturated fat and cholesterol. Choosing soyfoods can be a great option!
