Garden Fresh Grilled Burgers

These Garden Fresh Grilled Burgers are loaded with vegetables for a healthy burger that is loaded with flavor! 

Summer is coming! It is kind of hard to see it after a couple of inches of snow on Easter and the crazy daily rainstorms lately but it will be here before we know it. Troy and I have already grilled out 3 times and cannot wait to grill out almost daily once the weather is a bit warmer. We have been talking about all of the delicious foods we want to make on the grill this year. Some foods are family favorites and some foods, we want to make on the grill for the first time such as grilled pizza. A few favorites that we will keep making are grilled marinated chicken, grilled vegetable packets and homemade burgers.

Homemade burgers is something that my dad taught me to make and he has been making them for years. He is a hunter and used to make part venison, part beef burgers in quantity and freeze them. They have so much flavor and I always looked forward to eating them. Something that I love is that my dad packs a bunch of vegetables into the burgers. This helps to make them a bit healthier by cutting calories and fat. It also gives a boost of fiber, flavor, vitamins and minerals.

Troy and I love our burgers fully loaded: lettuce, tomato, onion, pickles, olives, jalapenos, ketchup, mustard, etc. We have been experimenting a bit and have also done a fried egg on them or stuffing them with jalapenos and other spices. These burgers are kept juicy with the addition of vegetables and are a summer staple in my home.

Garden Fresh Grilled Burgers

Ingredients:
1/2 cup fresh mushrooms, sliced
1 bell pepper, sliced
1/3 red onion
1/4 tomato
1 fresh jalapeno, de-seeded
1 egg
1/4 cup breadcrumbs
1 tsp garlic powder
1/4 tsp cayenne pepper (optional)
1 1/2 lbs ground, lean beef

Directions:

1. In a food processor, combine mushrooms, bell pepper, onion, tomato and jalapeno. Process until veggies are mostly ground.

2. Add in egg, breadcrumbs and spices and blend until smooth.
3. Transfer mixture to a bowl and mix well with ground beef.
4. Form burgers into patties (this size will make about 8 burgers).
5. Grill on medium heat until your choice of doneness.
6. Top with your favorite toppings- tomatoes, onions, pickles, lettuce, mustard, ketchup, jalapenos, etc.

I'm going to be real honest here- these were so good that I ate two whole burgers for dinner!


Marinated Grilled Vegetables

On the side, we had a bunch of marinated grilled vegetables

Ingredients:
1 large eggplant, sliced
2 bell peppers, cut into large pieces
1 bunch asparagus
~1/4 cup balsamic vinegar
~2-3 tablespoons olive oil
1 tsp garlic powder

Directions:
1. A few hours before your meal, marinate vegetables in oil, garlic and vinegar mixture.
2. Grill for a few minutes on each side (if you have a grill mat, it will make it easier). 

You're going to think that I'm a little crazy when you read this but I am obsessed with the New Heinz® Yellow Mustard. About 5 years ago or so, my sister and I realized that Heinz mustard is the best. See, we already loved mustard a ton (my sister especially- her plate always has a huge pile of mustard on it) and then we discovered that something about Heinz Yellow Mustard is so much better than the rest. Around where I live, you cannot find it everywhere though. When we do find it, we buy at least 5 containers of mustard. You can call it an obsession. In fact, I bought my sister a Heinz Yellow Mustard ornament this year.

It has an extra flavor of sour or tangy in my opinion which I just love. We like to eat this on burgers, sandwiches, fries, hotdogs, etc. It is so good! It uses 100% natural ingredients.
