Tropical Coconut Popsicles
The weather is still hot and we are taking every advantage of summer that we can. We are sneaking in extra trips to the park, eating outside more and eating lots of ice cream and popsicles to soak up every last bit of summer that we can.


In the winter, we always miss it being warm and being able to be outside so we are doing everything outside right now. I love it!

Tropical Coconut Popsicles
I created these tropical coconut popsicles with my daughter in mind. She loves anything frozen and I wanted to make something very healthy that she could eat. I try to avoid added sugars for her so these are perfect because they contain protein, fiber and vitamins and minerals.

Tropical Coconut Popsicles

Ingredients:
1 cup milk
1 banana
1/2 cup chopped fruit (strawberries, peaches, pineapple)
1 tablespoon chia seeds
1 tablespoon unsweetened coconut

Directions:
1. Blend together banana and milk until smooth.
2. In a large bowl, mix together milk/banana mixture, fruit, chia seeds and coconut.
3. Pour into popsicle molds and freeze until solid.

Tropical Coconut Popsicles
Enjoy! Take one of these out on a hot day to cool off.

These were a hit! My baby absolutely loved them and then demanded another one right after. I really enjoyed them too. I like the chunks of fruit among the smooth part with the banana. The chia seeds provide a boost of fiber, protein and omega 3 fatty acids.
