I try to stick to mostly healthy snacks that make me feel good. I like to choose ones that are rich in fiber, protein, not too high in calories and fairly low in sugar. I created these fudge bites when I had a sweet craving. Wow! They turned out amazing. They are so rich and "fudgy" but contain all good for you ingredients.
I'm not lying to you when I say that I ate 5 of these while writing this post. They are addictive. I took a couple at a time and then kept finding my way back to the fridge for more. They are honestly the best bites I have made and one of my favorite recipes on The Nutritionist Reviews.
Chocolate Peanut Butter Banana Truffles
1/4 cup coconut flour (can sub ground oats)
2 scoops Purely Inspired chocolate protein powder
2 tablespoons honey
2 tablespoons coconut oil, melted
1 well mashed banana
1/3 cup peanut butter
Unsweetened cocoa powder
Directions: Stir all ingredients together and mix very well until a dough forms. Put mixture in fridge for about 20 minutes or until partially firm. Roll dough into bite sized balls and then roll in cocoa powder.
Can eat immediately or these can be stored in the fridge all week. With the holidays coming up, these would be awesome to make for a party. No one would know that they contain healthy ingredients instead of ones that make you feel not as good.
For this recipe, I used Purely Inspired 100% plant based protein nutritional shake which worked well in this recipe to give a boost of protein and nutrients. The protein mix is dairy, gluten and soy free. One serving has 16 grams protein and 7 grams of fiber. It contains a concentrated greens blend with broccoli and spinach.
