I love to eat seasonally but in the winter, it can be harder to do. A couple of foods that are in season in the winter are oranges and grapefruit which are perfect in this seasonal salad. Citrus fruits are rich in vitamin C which is especially important during cold and flu season to help keep your immune system strong. The avocado and nuts provides a boost of healthy fats and the spinach is rich in iron and folic acid.


Today, I am partnering with my favorite grocery store ever, ALDI! All of the ingredients used in this recipe were purchased at ALDI. I shop at ALDI at least weekly and am able to find almost everything I need there for my family. Every time I go there, they have new healthy items. I just picked up some Greek yogurt, whole-wheat flour, dried apple slices, quinoa and many more healthy products.

My favorite part about ALDI is their low prices. I can get a bunch of food for my family for about half the price that I could at another store. When I find a good deal there, I like to stock up. For example, I have about 40 cans of low-sodium beans from ALDI which I found for an excellent price. Since we use 2-4 cans per week, I know that I will use them long before they expire.

My second favorite part about ALDI is the quality of their products. We have been buying some awesome trail mixes from there with dried cherries, walnuts, dark chocolate and more that tastes much more expensive than it is. The cheeses are high quality and the prices are so much better than in other stores. My daughter loves the extra sharp cheddar which is less than $2 for a block.

We also love the produce from ALDI. My favorites are the baby spinach, romaine, sweet potatoes, baby carrots, red onions, bananas, oranges, pears, pineapple and more. They also have excellent frozen fruits and vegetables. I like the frozen berries and the organic mixed vegetables which I love to microwave for a quick side dish on a busy night.

ALDI had a recent announcement that I was very excited about: they took out certified synthetic colors, partially hydrogenated oils and added MSG from all ALDI-exclusive food brands! In their 2016 ads, I have seen some great products including organic unsalted rice cakes (my daughter and I love these with almond butter), fiesta blend frozen fruit, Greek yogurt with chia seeds and more!

Avocado and Citrus Salad with Orange Vinaigrette 




Ingredients (Serves 4)
  • 6 cups Little Salad Bar Spinach
  • 1 orange, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1 avocado, sliced
  • 1/4 cup red onion, sliced
Citrus Vinaigrette
  • 1/4 cup Priano Balsamic Vinegar
  • 1/4 cup Carlini 100% Pure Olive Oil
  • 1 tablespoon Specially Selected 100% Pure Maple Syrup
  • 1 teaspoon orange zest
  • 1/2 teaspoon Stonemill Essentials Ground Black Pepper

Instructions
1. Whisk all ingredients together for vinaigrette and set aside.
2. Fill a large bowl with spinach. Top with orange, grapefruit, onion and avocado.
3. When ready to serve, top with vinaigrette.

For some reason, until now, I had never made a citrus salad. I'm so glad that I finally did! It was delicious and simple and something that I would definitely make again.
