When the weather starts to get warmer, I start to want lighter and healthier meals. I know many people say that they do not crave vegetables but I truly do. When I eat good, I feel good so that is what I strive to do most of the time.

I created this spiralized pad Thai after falling in love with my spiralizer. I want to spiralize everything that I can! This recipe is quite easy to make and tastes amazing. Plus, it is so much healthier for you than typical pad Thai!
Spiralized Pad Thai
Prep Time: 10 minutes
Cook Time: 5 minutes
- 1 tablespoon olive oil
- 2 medium zucchini, spiralized
- 3 large carrots, spiralized
- 1 green pepper, spiralized
- 1 small onion, spiralized
- 1/2 head red cabbage, spiralized
- 1 spring garlic shoot, diced
- 1 cup bean sprouts
- 1/4 cup peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes (optional)
- Chopped peanuts
- 2 diced green onions
- Lime wedges to top
1. In a large pan, heat oil.
2. Add all vegetables besides the bean sprouts and cook for about 3 minutes until vegetables are lightly cooked. Add in bean sprouts.
3. Meanwhile, whisk together all ingredients for peanut sauce. Pour over noodles and cook another 1-2 minutes.
4. Top with peanuts, green onions and lime wedges.
