Christmas Stir Fry

 In an attempt to use up some vegetables that were about to go bad, I made a quick green and red (Christmas colors) stir fry. It was delicious!

Ingredients:
1/2 bag spinach leaves
3/4 lb fresh green beans with the ends trimmed off
1/2 cup chopped tomatoes
2 tablespoons apple cider vinegar
2 tablespoons honey balsamic vinegar
A few shakes of onion powder, garlic powder, and black pepper.

1. Add all ingredients to a pan (first green beans, then spinach a minute later, then the tomatoes) and cook while stirring constantly for a few minutes.
2. Add spices and vinegars.
3. Top with some Garlic Gold Sea Salt!
This made for a delicious afternoon snack! These are some of my favorite vegetables out there and combined together with the vinegar tasted amazing.

  3. I was just thinking earlier today how much I love fresh spinach and have a ton in my fridge. I need to find some good recipes for cooking it, because you can only eat so many salads.
