Georgia Pecan Pie

The Georgia Pecan Commission recently sent me some of their pecans to review. It was perfect timing because my mom had asked me to make a pecan pie for Thanksgiving. The pecans came from Pearson Farm which is located in Georgia.


While pecan pie is not the healthiest dessert, it is full of healthy fat and fiber that comes from the pecans. Everything is okay in moderation! It would be a great option for Christmas or other holiday parties as well.

Georgia Pecan Pie
Yield: 2 pecan pies
Servings: 16

Ingredients:
2 premade pie crusts
5 large eggs
2 cups light corn syrup
1 1/3 cup packed brown sugar
1/4 teaspoon salt
2 cups Georgia pecan halves
2 teaspoons vanilla extract

Directions:
1. Preheat oven to 350 degrees.
2. Beat the egg with the corn syrup, brown sugar and salt.
3. Stir in the pecans and vanilla extract.
4. Pour the mixture into the prepared crusts.
5. Bake at 350 for 20 minutes, then cover with foil and bake 20 minutes more or until a knife inserted into the pie comes out clean.

The pecan pie turned out great and was enjoyed my family and my husband's family. The Pearson Farm pecans were nice and large which looked and tasted great. The pecans were flavorful and were a great addition to our Thanksgiving celebrations.
