Fresh Summer Vegetable Salad

In the summer, there is nothing like fresh fruits and vegetables. They taste so much better than the rest of the year. During the short time that we have access to these super fresh vegetables, I love to create my meals around tons of veggies. Here is a summer salad that I created for my husband and I.

Fresh Vegetable Summer Salad

2 medium sized tomatoes
1 medium green pepper
1 medium cucumber
1 green onion shoot
2 tablespoons fresh parsley leaves
2 tablespoons white wine vinegar
1 teaspoon black pepper

1. Chop tomatoes, cucumber and green peppers into small, bite sized pieces.
2. Chop green onion and parsley into small pieces.
3. Combine all ingredients together and serve.

*When choosing produce for this recipe, choose the freshest ingredients possible since they are usually the tastiest.

This recipe is vegan, vegetarian, gluten-free, wheat free and soy free.

This recipe turned out great! My husband and I both really enjoyed it. My husband had seconds of it and ate over 2 cups of vegetables for part of his meal! This is such a simple recipe but very fresh, especially with the addition of the parsley leaves.
