Healthier Mediterranean Nachos
I love Mediterranean food so much. In fact, it is my favorite kind of food. It is so flavorful, fresh and often, fairly healthy. I could probably eat this kind of food every single day. Growing up, my mom would make all kinds of homemade Mediterranean food that was always delicious.

I wanted to make a delicious recipe that would make a great appetizer for parties, especially for the holidays. This recipe combines lots of delicious Mediterranean flavors including tomatoes, homemade hummus, cucumbers, onions, olives and more. It is easy to make and would make a beautiful appetizer to serve to guests.

The homemade hummus is so flavorful as well. This recipe makes a lot so you will have leftovers of it for another snack or meal.

Healthier Mediterranean Nachos

Ingredients: 
1 bag Crunchmaster crackers
3/4 cup homemade hummus (see recipe below)
1/3 cup feta cheese
1/3 cup finely diced cucumber
1/3 cup finely diced tomato
1/4 cup diced onion
2 tablespoons sliced Greek olives
1/2 tsp dried rosemary
1/2 tsp dried oregano
1/2 tsp dried parsley


Homemade Hummus- makes a lot more than you need for this recipe
2 cans great northern beans (or chickpeas), drained and rinsed well
Juice of 1 lemon
1/4 cup olive oil
1 tablespoon dried basil
1/4 tsp salt
2 tsp garlic powder
1 teaspoon oregano

Directions:
1. Puree all ingredients together for homemade hummus until well blended.
2. Preheat oven to 350 degrees.
3. Open bag of Crunchmaster crackers and spread over a baking sheet.
4. Top crackers with large dollops of hummus, feta cheese, onion and olives. Top with Greek spices.
5. Bake in oven for about 5-10 minutes or until cheese is melty and hummus is hot.
6. Top with diced tomato and cucumber.

Surprisingly, these crackers stayed amazingly crisp even for leftovers with the hummus and feta baked on. I couldn't believe it since other crackers and chips always get soggy. Even the next day after being stored in the fridge, these were awesome.

I was very happy with how these turned out. I would definitely make them again for a party. If you do not have the time or ingredients to make the hummus, you can use store bought hummus.

This recipe uses my favorite crackers from Crunchmaster. We have been eating these crackers for years. I love them because they are super crunchy and do not melt in your mouth like some other crackers. These are our favorite with hummus and we go through bags of them so quickly.

Healthier Mediterranean Nachos
These crackers are gluten-free but you really can't tell. I would recommend these for everyone but especially to those who require a gluten-free diet because they are the best. They are made with brown rice flour and different seeds. My favorite is the roasted garlic flavor followed by the original because they are so versatile. I top the original ones with peanut butter, cheese or salsa. The roasted garlic flavor are awesome on their own or with hummus. 

Compared to other crackers, these are pretty low in sodium. A serving size is 16 crackers which I love because a lot of crackers have tiny serving sizes.
