Have you ever made a recipe that your whole family loves and cannot stop talking about for years to come? For me, this is my chipotle avocado chicken tortilla soup. I first found a recipe for this years ago in a small cookbook and made it for my family. They raved and raved about it.

I think it is pretty darn good but was surprised when they continued to talk about it for years to come. For Father's Day this year, my dad requested certain dishes from each of my family members: gazpacho from my mom, Greek pasta salad from my sister and guacamole from my brother. From me, he requested this soup. It turned out well and I decided to finally share the recipe with all of you.

Since I have made this recipe more than 5 times, I can say that it is easy, delicious, healthy and awesome.


Chipotle Chicken Tortilla Soup


Chipotle Chicken Tortilla Soup

Ingredients:
1 pound boneless, skinless chicken breasts, diced
1 tablespoon olive oil
2 teaspoons garlic powder
1 teaspoon chipotle powder
1 32 ounce container low-sodium chicken broth
1 can no-salt added tomatoes
Tortilla chips
1 avocado, diced
1 lime, cut into wedges

Directions:
1. Heat a medium pot on medium heat. Add oil and chicken and sauté until chicken is cooked through.
2. Add garlic powder, chipotle, broth and diced tomatoes.
3. Bring to a boil, reduce heat and simmer for another 5 minutes.
4. Top with tortilla chips, avocado and a lime wedge. Squeeze the lime into your soup for the best flavor.
