What excites me the most about recipe creation is thinking outside of the box. I love to lighten up typically unhealthy recipes. I enjoy creating recipes off the top of my head. This recipe idea came to me in the middle of the night when I was having trouble falling back asleep. I emailed myself the idea quickly so that I would not forget about it in the morning.

Everybody loves pizza so I wanted to take the idea for a traditional panzanella salad which includes tomatoes, toasted bread, an Italian dressing and more and change it up. I added turkey pepperoni, green bell peppers, mozzarella cheese, onion and olives for a delicious meal. You could eat this as a main dish or a side dish.

If you are making it ahead of time, make sure to not add the toasted flatbread until later so that it does not get soggy. Last year, I made a grilled tofu panzanella salad which was awesome. Try switching up your family favorites to make something new and interesting.

This salad is nutrient rich with the vitamin packed produce, calcium rich cheese and whole grains from the flatbread. I used turkey pepperoni for the pizza flavor which is lighter than the beef/pork version. If you are a vegetarian, you can still make this salad- just leave out the pepperoni. If you are a vegan, also leave out the cheese.

Pizza Panzanella Salad

Ingredients
  • Nonstick spray
  • 1 Flatout ProteinUP Carb Down wrap, cut into bite sized pieces
  • 1/2 teaspoon garlic powder
  • 2 cups grape tomatoes, halved
  • 1/4 cup turkey pepperoni, quartered
  • 1/2 green pepper, diced
  • 1/2 cup diced mini bell peppers
  • 1/2 red onion, diced
  • 1/2 cup fresh mozzarella cheese, diced
Homemade Italian Dressing
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoon black pepper
Instructions
1. Preheat oven to 350 degrees. Spray chopped flatbread with nonstick spray and sprinkle with garlic powder and bake in oven until pieces are crispy- about 8 minutes.
2. Whisk together all ingredients for Italian dressing.
3. Combine all salad ingredients except for toasted flatbread and dressing. When ready to serve, mix in dressing and toasted flatbread.

For this recipe, I used my favorite flatbread from Flatout. I chose to use the ProteinUP Carb Down wraps which have 12 grams of protein per wrap and only 8 grams of carbs. I love this brand because they taste great, are full of nutrients and they are made in Michigan.
