I've had this idea in my head for about the last nine months and now that it is getting warm again, it is time to make it happen! Everyone likes ice cream so I wanted to create an ice cream sundae that was totally healthy and could be eaten for breakfast. It turned out excellent and the kids were thrilled that they could eat "ice cream" for breakfast.

To make the ice cream, I blended together frozen strawberries, frozen banana, Greek yogurt and FoodScience of Vermont Superior Reds drink mix. It came out to be the creamiest ice cream!! Then, I topped it with a drizzle of peanut butter, sliced bananas and strawberries, chopped peanuts, a sprinkle of granola and of course, a few pieces of chocolate.

For this recipe, I used the FoodScience of Vermont Superior Reds drink mix. It is loaded with phytonutrients and prebiotics. This line has three powders that contain 3 servings of fruits and vegetables in a half scoop. They can be mixed into juice or water or added to a smoothie. Or blended into a healthier ice cream of course! The choices are Superior Greens "Gut Rejuvenator", Superior Purples "Age Fighter" or Superior Reds "Energy Booster".

The ice cream is a fruity, healthy frozen Greek yogurt that is smooth and creamy. When you blend it, it will be more like a soft serve ice cream. If you want it to be firmer, throw it in the freezer for about an hour to make it more scoopable. You can also use whatever fruit you have on hand. You can make it just as a frozen strawberry yogurt or you could use blueberries instead. Whatever you prefer. Customize the toppings based on your preferences and what you have on hand. Use your favorite cereal or nut butters that you love.

INGREDIENTS

  • 2 bananas, frozen in pieces
  • 1 cup strawberries, sliced and frozen
  • 1 1/2 cups Greek yogurt
  • Splash of milk 
  • 1 scoop FoodScience of Vermont Superior Reds
  • Toppings: sliced bananas, strawberries, granola or cereal, nut butter, peanuts, chocolate

INSTRUCTIONS

  1. In a food processor, blend banana, strawberries, yogurt, a splash of milk and scoop of Superior Reds until smooth. Optional: freeze for 30 minutes to an hour to make it firmer if desired.
  2. Top with toppings of choice and enjoy right away.

I chose to try the Superior Reds in my healthy breakfast frozen yogurt and it turned out great. It contains resveratrol, lycopene and lutein. These nutrients can help benefit eye function, your immune system and cardiovascular function. It has a berry flavor, contains 2 grams of fiber and is gluten-free and vegetarian. The drink mix is tasty blended into a smoothie as well for extra nutrients. I love that it gave this healthy frozen yogurt a boost of flavor and nutrients.
