My husband and kids are home for the summer which means having family breakfast together each morning! It is the best. Sometimes, we keep it simple with yogurt with chia seeds and granola or cereal and other mornings, we get fancy and make Whole-Grain Peaches and Cream Pancakes or a vegetable hash with fried eggs. Depends on our mood!

Peaches and nectarines are amazing right now so I have been buying as much as I possibly can and eating them all the time. My whole family loves them and so do I. They are only in season for so long so I want to use them in as many recipes as possible. Peaches are a good source of fiber, vitamin A, vitamin C and potassium making them a great snack choice. My parent's grow their own peaches at the farm and I can't wait until those are ready!!

I wanted to make these pancakes so that everyone can enjoy them and therefore, I chose to make them dairy-free. For the "cream", I used Silk Almondmilk Yogurt Alternative right in the pancakes and as a topper. It is rich and creamy and a yummy yogurt alternative. We love using this yogurt in smoothies or eaten as is. They come in 5 different flavors in single-serve cups and they also come in 24 ounce tubs. It is dairy free, made from California almonds and has no high-fructose corn syrup. I was honestly shocked at how creamy this yogurt is! It's been awhile since I've tried Almondmilk yogurts and they have come a long way.

You know that I am always making recipes whole-grain and these pancakes are no exception. I use white whole-wheat flour or oats which I find to work just like all-purpose flour in recipes. If you need gluten-free, just sub gluten-free flour that measures 1:1 like regular flour.

My daughter helped me make these pancakes and we all enjoyed them together. She said "thank you so much for making this delicious breakfast Mommy". I'll take it! They made a perfect family summer breakfast that was really easy to make. You can make them in quantity and reheat them for a couple of days during the week.

Whole-Grain Peaches and Cream Pancakes

Whole-Grain Peaches and Cream Pancakes are dairy-free, whole-grain and full of delicious juicy peaches and cream. They make the perfect breakfast and a great for meal prep!
Prep Time:  5 minutes Cook time: 10 minutesTotal time: 15 mins

INGREDIENTS

  • 1 cup gluten-free oats
  • 5.3 ounce container Silk Almondmilk Yogurt Alternative- vanilla or peach
  • 1/2 cup applesauce
  • 2 large eggs
  • 1 tablespoon maple syrup
  • 1/2 cup dairy-free milk of choice
  • 1 teaspoon baking powder
  • 1 peach, sliced
  • Toppings: Silk Almondmilk Yogurt Alternative, sliced peaches

INSTRUCTIONS

  1. Heat a skillet or griddle until hot and spray with cooking spray.
  2. Blend all ingredients for pancakes together until smooth (except for peaches). Mix in peach slices.
  3. Using a 1/4 cup measuring cup, scoop batter onto hot griddle. Cook until the edges have cooked and bubbles are forming on the tops on the pancakes, about 2-3 minutes.
  4. Flip and cook for 1-2 more minutes. Continue until all of the batter is gone. Spray the skillet each time that you make a new batch.
  5. Top with additional yogurt and sliced peaches.
Enjoy!

*Stores well in the fridge for several days.
**Freezes well. Don't bake it, freeze and bake once it is defrosted when you're ready to eat.
