I can't stop making Mediterranean food! I have countless recipes on The Nutritionist Reviews that use hummus, feta, tzatziki, chickpeas and more. When I have the option of choosing a restaurant, the first thing that always sounds good is Mediterranean. I love it! Yesterday, Troy and I had the opportunity to go to lunch and found a Mediterranean place a 1/2 mile from where we were. We drove there and it was CLOSED. I was so disappointed!

No worries though! I can make great Mediterranean food at home including these easy Loaded Falafel Bowls. I made these the very next day after it didn't work out at that restaurant because I was craving my favorite kind of food. I chose a bunch of Mediterranean-inspired ingredients for these bowls but feel free to use whatever you want.

I used a store-bought hummus, falafel burgers, tomatoes, cucumber, kalamata olives, peppers, feta cheese, lemon and red onion. I think that tzatziki would also be great on there along with beets, tahini sauce or roasted vegetables. This bowl is filling and would be perfect to serve all nicely served in a bowl or even as a build-your-own falafel bowl bar.

I would make up a bunch of these for meal prep as well for a super tasty lunch during the week. Also, with the holidays coming up, these falafel bowls would be great for a healthier meal between main holiday meals.

Although I am not a vegetarian, I love eating vegetarian meals. They are often less expensive, more nutritious and I feel better after eating them at times. Consumers are reducing the amount of meat in their diets and this meal is a great way to do so. I love serving my family a large variety of foods to expose them to all different tastes. Both of my kids loved these bowls!

I used MorningStar Farms® Falafel Burgers which are brand new at Walmart! They are vegan, made with 100% plant-based protein from beans and rice and come in a bigger 1/4 pound size so they are more filling. They are delicious grilled and have 9 grams of protein. They're loaded with flavor from cilantro, parsley and onions.


I love all MorningStar Farms products and eat them regularly. The Chipotle Black Bean Burgers and Maple Sausage are my favorites. Loaded Falafel Bowls take 10 minutes to make and are full of flavorful ingredients including falafel burgers, tomato, cucumber, kalamata olives, feta cheese, bell peppers, hummus, lemon and red onion!

INGREDIENTS

  • 4 MorningStar Farms Falafel Burgers
  • 1 cup cherry tomatoes, sliced
  • 1 medium cucumber, sliced
  • 1 bell pepper, sliced
  • 1/2 red onion, sliced
  • 1/2 cup feta cheese
  • 1/2 cup hummus
  • 1/2 cup kalamata olives
  • 1 lemon, sliced

INSTRUCTIONS

  1. Cook falafel burgers according to directions- oven or grill works well.
  2. Slice tomatoes, cucumbers, bell pepper and onions.
  3. In bowls or meal prep containers, divide up all ingredients between 4 containers. Eat immediately or stores well in the fridge for a few days.
