Loaded Greek Nachos

My favorite kinds of food to make are anything Greek or Mediterranean. I am always trying to come up with new, interesting and healthy spins on Greek food that my family loves. I love making Loaded Greek Fries so I decided to come up with Loaded Greek Nachos. This would be an awesome appetizer for a Friendsgiving gathering.

I could not decide whether I should purchase pita chips or make my own out of pitas. For this recipe, I ended up using fresh pitas and making my own pita chips since they are quite easy to make. To save time, feel free to use store-bought pita chips if you prefer.

I topped these Loaded Greek Nachos with all kinds of delicious toppings. If I'm going to make nachos, I'm going to make them fully loaded. I topped the homemade pita chips with a mixture of mozzarella and feta cheeses to melt on. Then, I topped them with Sabra hummus. You can feel free to use any flavor of Sabra hummus for this recipe.

Sabra hummus is awesome for gatherings because it tastes amazing, everyone loves it and it requires no prep work on its own. I would totally bring these nachos to a Friendsgiving gathering. I went with my favorite roasted pine nut hummus. Sabra hummus has been a long time favorite because it is so delicious. You can find it at most grocery stores, it comes in a variety of flavors and we love to eat it in so many different ways. My favorite way is heated on a panini!

Then, it is time to go crazy with the veggies. Load those nachos up! You can eat these as an appetizer or even as a main meal. Nachos are one of my family's favorite dinners and we make them healthy by topping with a bunch of veggies. My veggies of choice were bell peppers, red onion, tomato and cucumbers. For even more flavor, I topped them with kalamata olives.

If you want to add meat to these Greek hummus nachos, you could add shredded chicken, ground beef or ground lamb. I also like to drizzle my nachos in a creamy feta Greek dressing (or something similar) from the grocery store. No matter what toppings you choose to put on, this appetizer is a total crowd pleaser! This dish will disappear in no time.

Loaded Greek Nachos are loaded with melted mozzarella and feta cheeses, creamy hummus, tomato, cucumber, olives and more for a flavor-packed, crowd pleasing appetizer!
Prep Time:  10 minutes Cook time: 12 minutes Total time: 22 mins

INGREDIENTS

  • 4 medium whole-wheat pita loaves
  • 1 tablespoon olive oil
  • 2 teaspoons Italian blend spices
  • 1 teaspoon garlic powder
  • 1/4 cup mozzarella cheese
  • 1/3 cup feta cheese
  • 1/4 cup Sabra Roasted Pine Nut Hummus
  • 1/4 cup tomato, chopped 
  • 1/4 cup yellow bell pepper, chopped 
  • 1/4 cup red onion, chopped 
  • 1/4 cup cucumber, diced
  • 1/4 cup sliced kalamata olives
  • Parsley to garnish

INSTRUCTIONS

  1. Preheat oven to 400 degrees. On a sheet pan, cut pita into bite sized triangles and brush with olive oil. Sprinkle with garlic powder and Italian blend spices. Bake in oven for 10 minutes until pita chips are crispy flipping halfway through.
  2. Remove pita chips from oven and top with mozzarella cheese and feta cheese. Melt in oven for about 2 minutes.
  3. Remove pan from oven and top with dollops of hummus, diced pepper, red onion, tomato, cucumber and kalamata olives. Sprinkle with fresh parsley. Serve immediately
